Avocado Chocolate Mousse

Today, I find myself in warm and sunny Florida. It feels surreal to be sitting outside on the lawn in the middle of February. There are commercials on TV advertising discounted bags of mulch. There are even fruit stands set up along major streets. #OnlyinFlorida

Now that I have all this sudden free time, I can write about a phenomenal dessert my friend introduced me to. This dessert is an amazing vegan dessert. On top of that, there is no gluten in it, which makes it the perfect all-inclusive dessert for all your diet restricted friends. Wait! There's more! The recipe takes between 5-10 minutes to put together--just throw all ingredients in a blender and chill.


Avocado Chocolate Mousse


Makes enough for 4 servings

Ingredients:
2 ripe avocados (soft avocados will blend more easily)
1/4 - 1/2 cup of agave nectar (substitute for honey or any other sweetener). add to taste
1/4 - 1/3 cup coco powder
2 tablespoons almond or vanilla extract

Optional Ingredients:
pinch of salt
melted chocolate chips 
almond, soy, dairy milk to change the consistency of the mousse


Preparation:
1. Place all the ingredients in a food processor or blender. Blend until smooth.

2. Add optional ingredients to taste.

3. Chill for at least 30 minutes prior to serving.
